Yesterday after work I was too lazy to study so I made some apple pie since I got free apples from work. I used my normal apple pie recipe but I made them in smaller portionsized ramekins rather than in a large pie dish. I used 4 apples for 7 ramekins. I did have excess pie dough left over which was a bit of a waste.

Ingredients:
5-8 apples (if using a full size pie dish)
cinnamon
sugar

Pie dough
175 g butter
1 dl (100ml) of sugar
3 dl (300 ml) of plain flour
1/2 tsp of baking powder

How to:

Put the oven on 225 degrees celcius.
1. Peel and core the apples. Cut the apples into small chunks, or if using a large pie dish into thin slices.
2. Mix cinnamon and sugar together in a bowl or a plastic bag.
3. Toss in the apples and mix so that all apples are coated in the sugar and cinnamon micture
4. Melt the butter in a saucepan
5. Mix in the sugar.
6. Mix in the flour and the baking powder.
7. Pour the apples into dishes. You may need to grease the forms before. I did not and they did  not stick.
8. Press the dough out over the apples.
9. Bake in the middle of the oven for about 20min. The pie is done once the apples have turned a bit soft and the crust is golden.

Serve warm with vanilla custard.
